Is there a way to ensure that our proposals don't go to a client's spam account? I've sent out 5 proposals yesterday and each one went to a spam folder

Some suggestions...
1) Use a different email (different domain) to use for email marketing. If your domain gets tagged as a spammer then your doomed to the Junk folder.
2) Have your clients add you to their safe sender list in Outlook. I have to have a client do this occasionally.
To add someone to your Outlook Safe Senders List, go to:
Settings (Gear icon) > Mail > Junk email
then select the Safe senders and domains tab, click + Add, enter the email address or domain, and then Save, ensuring important emails bypass your Junk folder.
Your client can also quickly add from an email by right-clicking it and choosing Junk (or Block) > Never Block Sender, or add directly via the Settings menu in Outlook.com or desktop apps
